I whipped these delicious 4-ingredient crunchies up just before Christoff and I left for our cycling holiday and they were great! They require no baking, they’re healthy, sweet and they’re perfect for munching while you’re on the bike!

- I cup packed (200g) medjool dates, pitted
- 1/4 cup natural peanut butter
- 1 cup raw almonds
- 1 1/2 cups rolled oats
- optional additions: dark chocolate chips, dried fruit, honey, banana chips, coconut shavings, Himalayan salt for a salted-caramel flavour
Spread oats onto a baking tray and toast in the oven at 180 degrees Celsius for 10-15 minutes until lightly golden, stirring every now and then
In the mean time, process dates in a food processor until they form a dough-like consistency (it makes a ball of dough)
Warm the peanut butter (and honey if you’re adding it) in a small saucepan on a low heat until smooth
Place dates, almonds and oats in a bowl and mix in the warmed peanut butter, breaking up the dates to disperse them throughout. I added Himalayan salt to my mixture because my peanut butter is unsalted.
Once thoroughly mixed, transfer to a 15 x 15cm baking dish lined with baking paper so they lift out easily, pressing the mixture down firmly to ensure it is uniformly flattened
Cover dish with cling wrap and place in the freezer for 5 minutes
Remove mixture and cut into 16 even squares. They can be stored in an airtight container for a few days or kept in the freezer so they last longer
